Rachael's Excellent Adventures

My friend, Rachael Carroll, loves to travel. She and her husband have been all over the country, capturing beautiful and memorable images of their adventures. The accompanying photo of Lake Trillium and Mt. Hood, OR, are Rachael originals.


When I follow Rachael's adventures on social media, I always note how well organized their trips are and how they take advantage of so many sites and events, getting the most out of their time. When I invited her to be on my podcast, I told her I wanted to have lots of different conversations with her (many more to follow), but I wanted to start with her travel advice.


Rachael and I met as volunteers with the Combined Federal Campaign, the program that allows Federal employees to make charitable donations and pledge volunteer hours to qualified charities. We both served as keyworkers and helped plan multiple charity fairs. I gravitated to her sunny personality. Rachael is an animal lover, a giver of her time to help others, and an all-around great person. I'm so glad to call her my friend.


Her latest venture is Sweet Heat Cravings. She's taken her extensive gardening and cooking talents and turned them into a home-based business that specializes in handcrafted candied nuts, jalapeño pepper jellies, smoked beef jerky, smoked cheeses and more. I love that her ingredients are locally sourced in the Fredericksburg, VA area whenever possible. I can speak from experience that her jellies (which I love to pair with goat cheese), jerky (absolutely amazing!) and smoked cheddar (soooo good) are fantastic for entertaining.
